       Chocolate Chip Mocha Cookies
 
                             Cream together
                         ¾ cup butter: softened
                         ¾ cup packed brown sugar
                         ½ cup white sugar

                                 Add
                        1 teaspoon vanilla
                        1 egg, slightly beaten
                   Add together in a separate bowl
                              ¼ cup cocoa
                        2 tablespoons instant coffee
                        1¾ cups flour
                        1 teaspoon baking soda
                        1 teaspoon baking powder
                        ¼ teaspoon salt
                        Mix into creamed mixture
                   Now add 1 cup chocolate chips.

            Drop by teaspoon onto ungreased cookie sheet.
          Bake for 10 to 12 minutes in preheated oven 350º
             Let cookies cool on cookie sheet for 1 minute,
                          then move to cooling rack.
                             Makes 3 to 3½ dozen

Rolled Sugar Cookies

 

Cream together:
I/2 C. Butter
1/2 C. Crisco
1 Egg
1 tsp. Vanilla

Add and mix together in a bowl:

1/4 tsp Salt
1/4 tsp Soda
1/4 tsp. Cream of Tarter
2 C. Flour
1/2 C. Powdered Sugar
1/2 C. White Sugar

Add to creamed mixture and blend well. Chill 1 to 2 hours. Roll out dough on floured board and cut out in desired shapes. Bake @ 375 degrees about 12 minutes or until light brown. The time depends on how thick the dough is cut.

I substitute 1/2 c. or less of Splenda for the white sugar.
I have substituted ½ tsp Baking Powder to replace the Soda and Cream of Tarter in an emergency with no ill effects.

Lemon Bars

¾ cup butter (softened)              ¼ tsp salt

½ cup sugar                              2 cups flour

Topping

4 Eggs                                   ¼ cup flour 

1 ¼ cups sugar                    1 tsp baking powder

¼ cup lemon rind                 1 tbsp icing sugar

½ cup lemon juice

Grease a 9 by 13 pan
Preheat oven to 325 degree F
.
Make Base

In a bowl beat together butter, sugar, and salt until light. Stir in flour until blended. Press into pan. Bake until golden, about 25 minutes.
Let cool.

Make Topping

In another bowl beat eggs with sugar until pale. Add lemon rind, lemon juice, flour, and baking powder, beat until smooth.

Pour over base, bake for another 25 to 30 minutes.

Let cool completely. Dust with icing sugar.

Cut into bars

Taco Surprise

Great for Christmas Or New Years

For Your Dip You Will Need:

1 can of Baby Shrimp

1 pkg Cream Cheese

½ cup Sour Cream

1/2 cup Mayo

1 Tomato Chopped

1 Green Pepper Chopped

2 Green Onions Chopped

1 Med Jar Salsa Sauce

Grated Cheese

Crackers or Taco Chips

Pick a bowl that is large enough to hold all the layered ingredients. If you want to be fancy find a nice bowl that can be placed in the centre of a platter and arrange the Taco Chips around the bowl. You can of course set the Taco Chips and the Dip out separate.

1:Mix cream cheese (at room temp) in a bowl, add sour cream and mayo. Mix well.

2: Add salsa over cream cheese mixture.

3: Sprinkle veggies over top of the salsa.

4: Add shrimp over the entire mixture

5: Top with Grated cheese.
(You choose the amount of cheese your family would enjoy)

6: Arrange crackers or Taco Chips around your bowl.

This is very good; you’ll not be able to stop eating.
