

Lemon Bars
¾ cup butter (softened) ¼
tsp salt
½ cup
sugar 2 cups flour
Topping
4 Eggs
¼ cup flour
1 ¼ cups sugar 1
tsp baking powder
¼ cup lemon rind 1
tbsp icing sugar
½ cup lemon juice
Grease a 9 by 13 pan
Preheat oven to 325 degree F.
Make Base
In a bowl beat together butter, sugar,
and salt until light. Stir in flour until blended. Press into pan.
Bake until golden, about 25 minutes.
Let cool.
Make Topping
In another bowl beat eggs with sugar
until pale. Add lemon rind, lemon juice, flour, and baking powder,
beat until smooth.
Pour over base, bake for another 25 to
30 minutes.
Let cool completely. Dust with icing
sugar.
